Combining chicken with rice

Want some chicken rice recipes? I think that combining chicken with rice is kind of tricky. The problem is that the grains of rice are just too darn small. My solution is to use a lot of liquid. This means either making a very ‘saucy’ chicken dish to serve over rice, or adding rice to a chicken soup or stew. For instance, you can make something like a chicken pot pie filling and serve this over rice. Or you can replace the noodles with rice in chicken noodle soup. Also, I know it’s not rice exactly, but chicken goes really well with orzo (rice-shaped pasta) that has been boiled in chicken stock. Try adding grilled chicken, feta, garlic, olives, grape tomatoes, and green onions with a simple vinaigrette dressing for a light summer salad!
